Ingredients
2 cups heavy cream
1 cup unsweetened almond milk
¾ cup low-carb sweetener (erythritol, monk fruit, or allulose)
4 egg yolks
1 tbsp vanilla extract
½ cup sugar-free chocolate chips (or chopped dark chocolate 85–90%)
Pinch of salt
Instructions
Heat the base
In a saucepan, combine heavy cream + almond milk. Heat until warm (not boiling).
Mix egg yolks & sweetener
In a bowl, whisk egg yolks with sweetener until smooth.
Temper the eggs
Slowly pour warm cream into the egg mixture while whisking (prevents scrambling).
Cook custard
Return mixture to the pan and cook on low heat until it thickens slightly.
Add flavor
Remove from heat, stir in vanilla + salt.
Chill
